finger lickin good

Pisang means Banana in Malay and Pengat Pisang means Banana in Sweet Sauce.

This is a rather straight-forward recipe and it tastes surprisingly good as the sliced bananas are simmered in sugary and milky sauce... Yet, it does not taste too rich but is light and refreshing.


Pengat Pisang (Banana in Sweet Sauce) Recipe

Ingredients

5 large firm bananas

2 cups of coconut milk

1 cup of water

half a cup of castor sugar or brown sugar

salt to taste

Preparations

1. Slice the bananas thickly.

2. Pour the water into a large deep pan and heat it. When it starts to boil, pour the sugar into the pan, reduce the heat and let the sugar dissolve constantly stirring.

3. When the sugar has dissolved, put the bananas into the sweet sauce. Let it simmer.

Pengat Pisang starting to boil.

4. Then, immediately add the coconut milk. Bring to a boil again and when bananas are soft (but not mushy) switch off the fire and serve warm.

Now it's boiling away.

Note: Coconut milk in cans or small cartons are available at Asian grocers.

Yummy Pengat ready to eat!
